In many ways, we've already begun the process of opening the new Gage & Tollner: assembling the team, designing the menus and interiors, building relationships with contractors, vendors, and city officials. In the next few weeks, we'll continue to prepare for Day Zero, so we can hit the ground running as soon as the ink on the lease is dry.
Gage & Tollner Hospitality LLC signs a 15 + 5 year lease for 374 Fulton Street.
File permit for demolition, and initial permits for kitchen and basement. Begin process with LPC for main dining room filing. Submit Place of Assembly certificate application. Build construction fence and begin demolition upstairs, in kitchen area and in bathrooms. Submit full DOB filing. Hire hood/Ansul company and submit plans to FDNY. Engage subcontractors and begin ordering items and equipment that require lead time. Finalize application for liquor license.
Begin plumbing and electrical work. Schedule plumbing rough inspection. Order banquettes; source furnishings and casework.
Begin work on façade and main dining room. Install hood, ansul and cooking equipment. Install refrigeration, sinks and dish washing station. Install bar equipment on main floor. Install security system
Call for fire test and final inspection of plumbing on first floor and basement. Equipment is operational. Refinish floor in front bar area and install carpet in main dining room. Install signage. Finish bathrooms. Install light fixtures. Install casework in service area.
Bring in furniture and small wares. Install back wall and mirror in main dining room. Schedule Place of Assembly inspection.
Install POS and sound system. Bring in inventory and begin staff training.
Open dining room on first floor for business. Construction continues on second floor.
Complete work on second floor: two private dining rooms, auxiliary kitchen, and Sunken Harbor Club cocktail bar. Open PDRs for private events; open cocktail bar.
